easy GF protein pancakes

i’ve been on a mission to eat more protein at breakfast, & these protein pancakes are hands-down the easiest & most DELISH option i’ve found! our kids approve too 💯

at first glance this ingredient list might look sketch, but i promise you, these pancakes are sooo yummy (& you know i wouldn’t steer ya wrong 🤝🏻). cottage cheese, egg whites, & collagen are all super high in protein, & blending it all means no weird textures! i’ve made these probably 3x per week since i saw this recipe on tiktok.

ingredients:

- 1 cup cottage cheese

- 1 cup oats

- 1 cup egg whites

- bloop of vanilla extract

- 1 scoop of collagen (i use perfect supplements - code ABIGAIL10!)

- dash of salt

directions:

  1. blend all ingredients in a blender until smooth

  2. let mixture sit for 10 minutes so the batter can thicken

  3. add butter to your pan & pour batter in, & cook just like normal pancakes!

  4. top with butter & maple syrup 🧈

this makes enough for 2 adults & there’s 60 grams of protein in this recipe so it’s 30 grams of protein per person! plus the oats add in great fiber too. hope you love these pancakes as much as we do 🫶
