simple chia pudding recipe
we are big chia pudding fans around here. tastes like dessert, full of fiber, healthy fats & protein because i add collagen!
i recently got on a kick of making chia pudding after kyle had surgery and was prescribed narcotics for the pain - every time he’s on them, he gets super constipated and doesn’t 💩 for like a week+ … but this time around, with him eating chia pudding every morning, things were movin’ & groovin’ by day 2 🙃
i measure with my heart (as always), here are my guesses for those of you who like an exact recipe 😉 but rest assured…chia pudding is so forgiving & you can always adjust as needed after it sets!
ingredients:
- 1/2 cup chia seeds (8 tbsp)
- 1 can coconut milk (full fat!)
- 1/3 cup milk (i use whole milk)
- tsp of vanilla extract or vanilla bean powder
- tbsp of maple syrup
- optional: add a scoop or two of collagen and/or colostrum for extra nutrients! use ABIGAIL10 to get 10% off my favorite collagen & ABIGAIL to get 10% off the colostrum we love!
directions:
blend all wet ingredients (everything except chia seeds!) in a blender until smooth
once combined, grab 2 jars & add half of the liquid into each
mix 4tbsp chia seeds into each jar
refrigerate for at least 2 hours until it becomes pudding-like, then stir & eat!
it should stay good in the refrigerator for a week - maybe more, but it never lasts that long in our house!
