summery shrimp pasta recipe
this easy yet flavorful pasta dish has become one of our fam faves! i can’t take credit for it — my MIL made it for us when she was staying with us to help out after kyle’s recent surgery…& i’ve been obsessed with it ever since! it satisfies the pasta craving without leaving you too full. we love to eat it with an arugula or romaine salad on the side!
i never measure for this recipe but for all you exact recipe lovers…here’s my best estimate of proportions:
LIGHT + SUMMERY SHRIMP PASTA RECIPE:
halve 1/2 carton cherry tomatoes
chop 1/2 yellow onion
slice 4 cloves of garlic (garlic slivers > minced garlic, i swear)
sauté the above in 1/4 stick of butter on medium
once the onions are soft, add 2 tsp italian spices & then pour in a little white wine - anywhere from 1/8 to 1/2 cup depending on your preference. i do about 1/4!
mix together & turn heat to low
boil water & cook your pasta of choice! i think linguine or angel hair taste best, but DON’T overcook your angel hair bc soggy angel hair sucks lol
pat shrimp dry & sauté them in 1 tbsp butter! season with salt & pepper.
strain the pasta, & toss with the tomato + onion sauce! top with shrimp :) & grated parm OF COURSE!
option: add a couple spoonfuls of pesto to the sauce if you want!
