my favorite pesto recipe
ahhhhh, pesto. deliciously fresh, perfectly herby, somehow a little creamy, goes with basically anything… i actually think pesto might be my current favorite sauce ! plus it’s sooo easy to make - i never measure exactly, so feel free to adjust this recipe based on the flavors you love!
RECIPE:
2 cups fresh basil leaves, packed
1/2 cup freshly grated parm or pecorino cheese
1/2 cup olive oil
1/4 cup pine nuts
1/4 cup walnuts
3 cloves garlic
1/4 tsp salt
1 / add the basil & nuts to a food processor & pulse a few times! i use this attachment on our vitamix blender.
2 / add the garlic & cheese & pulse!
3 / while the food processor is on, slowly pour in the olive oil in a slow stream while it emulsifies! stir in salt & use immediately or store in an airtight jar in the fridge for up to 2 weeks!
EXTRA DETAILS —
i looove making a big batch of this at one time - doubling or tripling the recipe works great! just work in batches if your food processor isn’t big enough :) a fresh loaf of sourdough + jar of pesto = the sweetest gift to drop at a friend’s doorstep.
you can actually freeze pesto! grab a freezer ice tray & add a bloop of pesto into each cube, then pop it into the freezer until you’re ready to use it!
