the best bacon fried rice recipe

are you ready for truly the best, & easiest, breakfast/lunch to make at home? because it’s. here. this recipe is inspired by the denver restaurant onefold’s bacon fried rice, which uses duck fat instead of butter, has a really yummy asian flair to it, & it overall just one of my favorite restaurant dishes ever!

this bacon fried rice is really similar, but basically just includes pantry staples & takes almost no time to make. i make this at least once a week (more in the colder months!) - especially now that i’m gluten free.

ingredients:

everything is estimated, as always - feel free to adjust as your heart desires

- 1.5 cups cooked, chilled rice (i cook a big batch of rice with bone broth in my instant pot & use it all week long!)

- 2ish slices of bacon

- 2 tbsp butter or oil

- 2-3 eggs

- green onions

- trader joe’s chili onion crunch

Step one:

add butter or oil to your pan on medium-high heat, & add cooked rice

step two:

cut up cooked bacon & add to the pan.

step three:

scoot your rice to one side of the pan & add more butter for your eggs!

step four:

crack your eggs & cook until bottom side is cooked through.

step five:

flip your eggs & let them cook for 30 more seconds - just enough to cook the whites, but leave the yolks runny! i don’t typically love runny yolks but for this recipe it’s perfect because the yolk becomes like a sauce.

step six:

add everything to a bowl, add some green onions, & drizzle with trader joe’s chili oil to finish! use your fork to break up the egg & combine everything well before diving in!
